Note: There is also a Sinclair ZX Spectrum game Maze-Man by Tudor Costigan, published as type-in by ZX Computing UK in their December 1982 issue. Except that they are both based on Pac-Man, the two games are not related in any way.
Maze-Man (two words, hyphen) was the first game by Frédéric Thiesse, and while it does not try to deny its Pac-Man roots, it is really quite a different game. The biggest difference is that the maze is not visible at the beginning, only the cornerposts are. The walls are revealed as you pass them by.
Besides that, the overall speed of the game is slower, giving it more the feel of a puzzle than an arcade game. On the first level, there is only one monster chasing you, and it is not very eager in its chase. On the second level another, more aggressive one joins it. Your character moves slower too, and stops as soon as the joystick is released.
